(Assemblage of 80% Chardonnay and 20% Pinot Noir. Dosage only 1 g/liter. A champagne from the “Les Champs de Vallier” location. The high proportion of Chardonnay is aged in oak barrels for around 18 months, including malolactic fermentation. After that it remains again on the lees for at least eight years. The total storage time is 13 years. Strong yellow, very fine perlage. Opulent, very ripe, slightly oxidative nose, apricots, dried fruits, hazelnuts and almonds, then also ripe apple, melon, pumpernickel, a wine for immersion, although not one for inexperienced noses, the wine is very complex. Extremely expansive on the palate, what a melt, what a creaminess, but straight and clear, no sweetness whatsoever (the dosage is only 1g/L), honeydew melon, bergamot, even pomegranate, the whole thing accompanied by an impressive minerality, full of character, salty and with excellent length in the finish. An extremely complex champagne that is demanding but becomes more fun with every sip. Serve not too cold in a large glass and give the wine time.
