Benoit Marguet has transformed the entire estate into an extreme biodynamic and
aromatherapeutic agricultural venture since 2009. Soil well-being is Benoit's top priority, and since 2010, all the vineyards have been plowed exclusively by two horses, which are part of the estate, making this practice unique in Champagne and very rare in the wine world.
In the winery, all the work is done by gravity. Fermentation takes place plot by plot in wooden barrels and small casks, with extended aging on the lees. No sugar is added, and the use of sulfites is virtually absent or kept at extremely low levels.
