The grapes undergo a unique whole bunch fermentation process, followed by gentle pressing and aging in Robinot's renowned barrels for approximately fifteen months.

Jean-Pierre's lifelong passion for wine was ignited at the age of 22 when he encountered a bottle of Cheval Blanc 1964, forever shaping his deep devotion to the world of wine. His journey led him to influential encounters with Jules Chauvet and Marcel Lapierre in the late 1980s, sparking a profound wine revelation.

His wine odyssey continued as he established L'Ange Vin, one of Paris' pioneering natural wine bars, and co-founded the internationally acclaimed magazine, "Le Rouge et Blanc," alongside critic Michel Bettane in his early 30s. This publication has since become a revered source of knowledge on natural wine growers in France.

Driven by an insatiable curiosity and a desire to comprehend natural winemaking fully, Jean-Pierre embarked on his winemaking venture in Chahaignes, his hometown in the Loire, in 2001. Here, he meticulously acquired plots of land surrounding his residence, cultivating Pineau d'Aunis, Chenin Blanc, and Gamay vines. Fermentation takes center stage in Robinot's winemaking philosophy, resulting in five distinct cellars, each housing wine at various stages of the process.

The labels adorning his bottles often feature artwork, either his own or his daughter's, or creatively manipulated photographs, making them unmistakably Robinot's.

Today, Jean-Pierre crafts two distinct wines, both meticulously made without the use of sulfur or other interventions. Domaine de L'Ange Vin wines originate from grapes grown in his own vineyards, while Opera du Vin wines are crafted from grapes sourced from neighboring vignerons.
